I'm used to people being a mile away. That suits me. It's more nerve-wracking playing in front of people who are two feet away from me.
Some of the best cooks that I've cooked with, whether it's in New York or Chicago or even here in Philadelphia, are actually Ecuadorians. And there's something about their palates that really just inspires me, and has a really deep sense of flavor.
No longer is there a quest for the truth so much as there is this apparent need to present both sides of an issue even if one is nothing but lies and distortions.
