The Momofuku Culinary Lab started as a space where we could focus on creating and innovating. I didn't want us to worry about working on projects in a restaurant; there are just too many distractions in service and running a kitchen to be able to focus on creating your dishes.
I've got a collection of songs that I've had, I keep adding to and they're all great American composers. I wanted to showcase American composers and I've done that on a lot of my records and played things by American composers that I really respect.
It comes back to the same old question people are always asking me: 'When are you going to do a solo record?' Well, if I did, it would probably be similar to 'Baluchitherium,' meaning it would be Van Halen music - which I write anyway - but without singing.
