I haven't figured out why people like what they like. I don't know. I wish I did. I could sell that to everybody, man, and be a millionaire.
That said, there are certainly still cooks out there who make fantastic historical cornbreads, though the old recipes have often been changed to include modern techniques and ingredients.
I went to 11 different schools. It was a fantastic adventure, but I was incredibly sensitive and needed a bit more stability.
