I'm surprised by the talent I find all over. There are always new chefs who propose many interesting new ideas, new ways of looking at ingredients.
In the mid-'60s, I quit school and wandered across the country, hitchhiked back and forth a few times, and ended up in hippie times, in the street in Toronto, in Yorkville.
The desire to play has always been in me. I remember my first experience at about four or five of really dying to sing and dying to play that came from no one telling me to do so.
